Nutritional characteristics and phenolic compounds of ripe fruit pulp from six accessions of Mammea americana L.

چکیده

Mamey apple (Mammea americana) is a tropical fruit largely consumed and more coveted as it rich source of antioxidants. There considerable interest in fruits phenolic compounds due to their different characteristics particularly role protection against cardiovascular diseases cancers through antioxidant activity. Nutritional were determined six mamey accessions: Sonson, Pavé 11, Lézarde, Ti Jacques, Escouët Antonio. The pulps the ripe analyzed for moisture, ash, total lipid, protein, carbohydrate contents. This study represents detailed report pulp. metabolite profiling associated with potential an important step bioactive molecules characterization. results showed that accessions studied contained three main classes compounds: flavan-3-ols, acids flavonols. Those characterization was then carried out first using liquid chromatography (HPLC) coupled Diode Array Detector (DAD). Finally, spectral fragmentations acquired by Mass Spectrometry (MS) Electrospray Ionization Interface (ESI).
